Winter Oyster Recipe

a lemon

With Christmas, New Year and Valentines day all fast approaching, there are plenty of reasons to up the aphrodisiac levels.

For the purist, oysters should be eaten raw and plain except for perhaps a squeeze of lemon juice. Here are a few alternative accompaniments though to add a little extra zing.

Shallot and smoked chilli vinaigrette

1 banana shallot - finely diced
100 mls red wine vinegar
1 pinch smoked chilli flakes

Mix all ingredients together and leave to infuse for at least 3 hours.

Caper and coriander dressing

2 tbsp finely chopped coriander leaves
1 tsp finely chopped extra fine capers
zest and juice of 1 lemon

Mix all ingredients and serve immediately.

Some say they are best eaten with a pint of Guinness, but whatever you do, stay away from the strong spirits.
