Blackberry, oat and walnut crumble

Enough for 4 people

For the filling

4 Bramley apples
Juice and zest of 1 lemon
600g fresh blackberries
100g Demerara sugar
half a cup of water

For the crumble

150g plain flour
75g butter
75g Demerara sugar
75g walnuts - chopped
75g rolled oats

Pre-heat your oven to 180°C/350°F/Gas 4. Peel, core and roughly chop the apples and drop into a bowl full of water and the lemon juice. Drain and transfer the apple to a small saucepan with the blackberries, sugar, lemon zest and water. Heat gently until the fruit begins to sizzle, but do not cook.

Meanwhile, make the crumble by rubbing together the butter, flour and sugar until it reaches the consistency of breadcrumbs.  Mix in the walnuts and oats.  Place the fruit into individual ceramic bowls and cover evenly with the crumble mix. Bake for 25 mins.
